Product image transformations will be added to the the site-wide default image transformation options chosen from dropdowns on the Cloudinary config page. Product image transformations will override any free form transformation options that have been specified in the 'Global custom transform' field of the Cloudinary config page.

You may need to clear or rebuild the Magento block and full page caches to see the changes in the front end.

Only images are listed - transforms to videos are not yet possible using the Magento module.
